When I was little, I practically lived at my best friend’s house. Every evening, we would eat dinner with her parents, and every evening, they would serve the world’s most delicious salad. I never got tired of it, and I bust it out whenever I’m feeling blue.

Last summer, I asked my best friend’s dad where he picked up the recipe, and his answer delighted me. He used to study in Berlin, where the winters are long and the sunshine hours short, and there he met an Italian friend. This friend passed on a wonderful salad recipe, and he told him something my BFF’s father never forgot: this salad is a bit of summer in this city the sun forgot.

The Summer Salad!

Ingredients:

Salad

– Red leaf lettuce
– Tomatoes
– English Cucumber
– Avocado
– Corn (I prefer canned corn in this recipe, weirdly enough, but frozen will do just fine)

Dressing

– Fresh basil leaves, sliced
– Olive oil (6 tbsp)
– Balsamic vinegar (2 tbsp)
– Salt & Pepper
